Ingredients:
- Buffalo Milk -- 2 1/4 ltrs
- Sugar – 500 gms.
- Yogurt – 25 gms.
- Earthen pot
- Deep Bowl of 1.5 kg.
Direction
- Add 300 gram sugar to the milk and boil it in medium heat for 40 minutes.
- Beat the milk constantly while boiling.
- When the milk has reduced to 45% and has become thick, put off the flame.
- Add the remaining 2oo grams of sugar in 50 ml of water and boil it until it turns into thick brown sugar syrup.
- Pour the sugar mixture (syrup) into the milk and heat it for another 20 minutes. Beat it constantly while heating.
- Pour the mixture into the earthen pot after it cools down and mix the yogurt.
- Stir it well until the yogurt mixes up thoroughly.
- Cover it and allow it to set for a day in warm place.
- Put it into the refrigerator after it gets thickened.
- Serve it chill.
